Ingredients
- 3 Cups Rolled Oats
- 1 Cup Oat Bran
- 1 Cup Honey
- 2 Large Eggs
- ½ Cup Nonfat Greek Yogurt
- 1 Banana
- ½ Cup Blueberries
- 1 Lemon, juiced
- 2 Cups Raw Whole Cashews
- ½ Cup Dried Cherries
- 1 Cup Chocolate Covered Cherries
- 2 tsp Vanilla Extract
- ½ tsp Sea Salt
- 1 tsp Ground Cinnamon
Instructions
- Preheat oven to 350º.
- In a blender, blend together blueberries, banana, and lemon juice.
- Pour blended fruits and cinnamon into a small saucepan and place on the stove over low heat, stirring constantly until hot. Remove from heat and stir in oat bran completely.
- In a food processor (I have a Magic Bullet), pour 1 cup of raw cashews and 1 tsp olive oil. Process until a cashew butter forms.
- In the bowl of your electric mixer, mix together cashew butter, fruit-oatbran mixture, honey, vanilla, salt, Greek Yogurt. Add eggs, one at a time. Slowly add rolled oats, one-half cup at a time. Fold in dried cherries, chocolate cherries, and 1 cup of raw cashews.
- In a baking sheet lightly brushed with olive oil, plop heaping tablespoons of the dough. These do not spread, so you should press them down a bit and shape them like a cookie. Place in the oven for 12 minutes.
